THE GUEST

Waiting for my guests to arrive is always a bit un-nerving as you never quite know who is going to walk through the door.  Over the years I have had some fantastic people to stay, and a few awful one's. I advertise mainly with one company called Wolsey Lodges.  They are fantastic and you know that the people who come through them are all going to be lovely.   www.wolseylodges.com .  If you ever think of doing B and B I highly recommend them.    I have been with them ever since I started.  I have tried a few other people but they are not as good as Wolsey Lodges.

The Guest is always right, what ever you feel about them.  This is very difficult to agree with some times as they are talking about your beloved home and castle.  What right do they have to criticize it.  Well, they are paying you first and formost.  Secondly you are trying to provide a service to the best of your ability.

You will know as soon as you answer the front door what sort of guest you have.  The Moaner who whinges about every thing but nothing and then leaves the most amazing comments in the visitors book.  The silent ones who never look happy and give you one word answers to every thing.  The one's who just never draw breath and you know the family history within 5 mins of them being in the house.  I love them all.  You do get very few exceptions who arrive decide they don't like your home and leave complaining about every thing, but they are very few and far between and in fact in 8 years I think I have only had 2 really bad guests.  You do make some very good friends through B and B.  I have some really lovely regulars and I am always very sad when they have to move on.  I love keeping in touch with them and they come from all over the world.  I just love it when they return again and again as it must mean I am doing some thing right.

If you like people, talking to them and looking after them then this is the life for you.  I highly recommend it.

Recipe 1

Breakfast

Smoked Salmon and Scrambled Eggs for 1 person

100g Smoked Salmon
2 Slices Wholemeal Brown Bread
3 Bantam Eggs or 2 large eggs
50g of Butter
Salt and pepper

Toast the Bread and cut the crusts off,  butter each slice and keep warm, cut into 4 triangles
Break the eggs into a bowl and whisk with a fork, add the salt and pepper to taste
melt the remaining butter in a non stick frying pan on a low heat, when the butter is melted tip in the eggs.  Stir with a wooden spoon and keep stirring until the eggs are just set.  Take them off the heat, they will still keep cooking.

Place the toast on a plate, place the fresh smoked salmon on the toast then pile on the scrambled egg.

Eat as soon as possible it is delicious.

replace the toast with muffins or bagels if you prefer.

Yum Yum

Life in a Farmhouse Bed and Breakfast

I live on a Farm in Cambridgeshire and run a Bed and Breakfast from our Family home.  Tim my husband is a Farmer and we are trying like all farmers to get our harvest in which is a night mare.  Being a farmers wife is an interesting life and I love it.  I decided to run the B and B about 8 years ago and I only have 2 rooms to let.  They can both be twins, singles or doubles.  Not sure my children love the B and B like I do, as they see it as an interference in their lives.  The fact that they have both moved out and have their own house in London make's not a jot of difference.

I thought I would write a blog and tell you all about some of the amazing people I have met over the years and also some of the wonderful stories that we have been told in the last 8 years.  The stories are true but the names are not.  I would never disclose who my clients are.

I would also love to share some recipes with you both for Breakfast, lunch tea and dinner.  I have a love for cooking and I like experimenting.  I try and buy every thing local.  I have pigs for my sausages and Bacon and Chickens for my eggs, though Environmental Health say I can not serve them as my chickens have not been vaccinated so they expect me to buy my eggs from a supper market which I refuse to do.  The EU says you can only serve eggs with the red lion stamped on them.  Quango as far as I am concerned.

Do you know how to cook a sausage I was asked by EH.  I think so I answered.  How long do you cook them for they asked.  Until they are cooked I answered.  Well how long in time is that, they ask again.  I dont know I say until I know they are cooked.  I have been cooking them all my life.  Do you probe them asks EH.  Probe them I ask !!!!!!!!!!!!!!!!!  Yes Probe them say EH.  No I say but thankfully in the back of a drawer I can produce a probe.

Answers please how do you cook your sausage's .  He He
